Calculators are estimates
The cook-time, stall, wood, and catering poundage calculators give planning estimates only. Real cooks vary with the meat, the pit, the weather, and the wood. They are not a substitute for a thermometer, your own judgment, or food-safety rules. You are responsible for cooking and holding food to safe temperatures, including the California requirements for hot holding.
Information on the site
Articles are written by our pitmaster for general education. They are not professional dietary, medical, or safety advice. Menus, offerings, and service areas can change without notice.
Catering
Catering orders are governed by a separate written quote or agreement. Nothing on this website is a binding offer until we confirm it in writing.
